With life’s fast pace do you really have time in morning to make breakfast? Here’s a quick and simple bircher muesli packed with vitamins and minerals that’s delicious and nutritious and will keep you going till lunch time.
Nutritional benefits include: monounsaturated fats; oats which contain beta-glucan – good for a healthy heart and a good source of vitamin C, selenium and phosphorus; chia seeds which contain omega 3 fatty acids, iron, zinc and calcium.
What you need:
60 g rolled oats
400ml nut milk (unsweetened almond or hemp)
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
1 tbsp dried fruit (cranberries, sultanas or chopped dates)
2 tsp chia seeds
1 tbsp chopped nuts (pecan, hazelnut etc)
2 handfuls of blueberries
1 tsp maple syrup
What you do:
Mix all the ingredients together, stir well and leave to stand for at least 15 minutes, preferably overnight.
Adjust the sweetness if required
If you are making this for 1 person, then halve the amount of ingredients and make it in a breakfast bowl.
As this breakfast needs to sit for around 15 minutes I generally make it before I have my shower.
It’s also a really good afternoon snack.
