Breakfast in a jar

How about taking breakfast to work with you? It’s great if you’re a shift worker or need to be up and out early in the morning. Just put your breakfast in a jar and carry it to work with you.

Nutritional benefits include monounsaturated fats good for a healthy heart, berries are a good source of vitamin C and the nuts are a rich source of minerals.

What you need:
50g raw walnuts
50g raw almonds
50g pumpkin seeds
50g raw sunflower seeds
1 handful blueberries
1 handful raspberries

Cashew nut cream
100g raw cashews, soaked for 1 hour and drained
100ml filtered water
1 tsp vanilla extract

What you do:
Drain the cashews place in a blender, add 60ml of water and blend, add more water as necessary to make a smooth cream, then add the vanilla extract and blend until mixed together.

Soak the remaining nuts and seeds for 30 minutes to 1 hour and drain. Then blend them in a food processor – until they are coarsely chopped but still retain their wonderful crunchy texture.

To serve place a layer of nut mix in the bottom of a jar top with cashew nut cream. Repeat the layers and top with berries.

Top Tip

You can soak the nuts overnight or it can be made the night before. You can also use natural yogurt instead of cashew nut cream.
