Broccoli & sausage frittata

This recipe works well as a vegetarian or a meat dish and is a great pastry-free alternative to quiche. It’s a good way to use up leftover vegetables and is quick and simple to put together on a busy evening, or you can take it to work for lunch and served with a green salad.

Nutrient-dense full of vitamins, healthy fatty acids, high in protein to help keep you feeling fuller for longer. Eggs are great for weight loss as they help to balance blood sugars and the vegetables and herbs ensure maximum vitamin and mineral intake.

What you need:

450g pure sausage meat
1 small head of broccoli, chopped into florets
2 medium red onions, sliced
2 cloves of garlic, crushed
1 pepper, red or yellow, diced
8 cherry tomatoes
8 eggs
Mixed herbs
Salt & pepper

What you do:
Preheat the oven to 190 degrees.

Lightly sauté the vegetables in the oil until softened.

Place the vegetables in a shallow (oiled) flan dish.

Beat the eggs with the herbs and seasoning.

Pour over the vegetables.

Bake for 25 minutes or until set, and serve with a crisp green salad.

Serves 4 – 6.

Top Tip

To make a vegetarian dish omit the sausage meat.
