Chicken & Mushroom Soup

On a chilly day what could be better than a delicious chicken & mushroom soup? – this recipe is like a big warm hug in a bowl.

Mushrooms are high in selenium and vitamin E research has shown that they help to reduce levels of oestrogen in the body by inhibiting the aromatase enzyme therefore protect the body from oxidative damage and is now being used to help fight the battle again cancer. Coconut milk is a good source of lauric acid which is found in breast milk, it can help to protect against heart disease and promotes weight loss.

What you need:
1 large onion, chopped
2 cloves garlic
1 tbsp butter
250g sliced mushrooms
200g cooked and shredded chicken
½ can of coconut milk
700ml chicken stock
Salt & pepper

What you do:
Sauté the onion & garlic in the butter until soft. Add the mushrooms and cook for a further 5 minutes.

Add the stock, coconut milk and chicken. Simmer for a further 5 minutes.

Season with salt and pepper to taste.

Top Tip

This recipe makes enough to serve two – so share with a friend, double up to feed the family or just put a portion aside to enjoy tomorrow. You can also take it to work in a flask for a delicious lunch.
