A super, simple soup with the taste of the Mediterranean – take in a flask to work or a eat as a quick lunch at home.
Lentils contain a rich concentrate of fibre and folate which are good for a healthy heart. This coupled with the vitamins and minerals from the vegetables makes this soup a good all-rounder if you looking to improve your health.
What you need:
1 onion, chopped
2 cloves garlic, crushed
½ red pepper, diced
1 courgette, diced
1 tbsp coconut oil
1 medium sized sweet potato, peeled, diced and steamed or roasted
500ml homemade stock
250g pre-cooked puy lentils
Season to taste
What you do:
Saute the onion, garlic, pepper and courgette in the coconut oil for 3 minutes.
Add the diced sweet potato and stock, and gently simmer until soft (about 10 minutes).
Add the puy lentils and serve.
You can replace the lentils with meat, for example: roast lamb or chicken
