Do you struggle to have a heathy lunch? This is a quick and portable lunch on the go at work or a picnic.
A balanced meal in a jar that is packed full of protein, healthy fats and fibre. This along with a variety of vitamins and minerals which and high in antioxidants this is a must for everyone who is trying to stay healthy and should be included in your week.
What you need:
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
For the salad
4 cherry tomatoes, halved
2 spring onions, chopped
1 carrot, grated
1 avocado, sliced
½ lemon, juice
½ cucumber, sliced
2 hard boiled eggs, shelled and sliced
handful of mixed lettuce leaves
handful of pine nuts
What you do:
Start with a clean mason jar
Layer 1 – balsamic vinaigrette
Layer 2 – artichokes, cherry tomatoes and spring onions
Layer 3 – carrots, avocado, then squeeze lemon juice
Layer 4 – cucumber, eggs
Layer 5 – mixed lettuce leaves and pine nuts
When you are ready to serve, if you are going to eat from the jar turn it upside down first to make sure the dressing covers the salad or turn out on a plate and enjoy.
The dressing must go in first to make sure your salad doesn’t go soggy.
This makes a great packed lunch for work or a picnic – remember to pack a fork or a long handled spoon and eat straight from the jar.
