A superfood salad with a fresh Greek twist, prefect for the summer. We should all aim to eat a rainbow diet and this dish ticks all the boxes.
This salad contains a wide variety of vitamin and minerals from the vegetables as well as healthy fats from the olives along with proteins provided by the feta cheese. This is good for heart health and also good to include if you want to lose weight.
What you need:
½ small red onion, sliced
2 handful baby spinach
4 tomatoes, cut in wedges or diced
1 small cucumber, cut in half lengthwise, then sliced
8 green olives, pitted and cut in half lengthwise
1 green or red pepper, thinly sliced
2 teaspoons chopped fresh dill
1 tablespoon chopped fresh mint
2 tablespoons fresh lemon juice
Salt to taste
5 tablespoons extra virgin olive oil
200g feta cheese, cut in small dice or crumbled
What you do:
Combine the onions, tomatoes, cucumber, olives, pepper, dill and mint in a large bowl.
Mix together the lemon juice, salt and olive oil.
Toss half of the dressing with the tomato mixture and half with the spinach.
Combine everything in one bowl, add the feta, toss together thoroughly and serve.
Can also be served with hard-boiled eggs or grilled chicken.
