A Spanish standard – soup for a sunny day. This was a great soup to enjoy on our Spanish retreat.

Good for…

A natural source of vitamins, iron, calcium, magnesium, manganese, zinc, copper, potassium and sodium. It provides fibre and antioxidants e.g. lycopene. It’s also great for keeping you hydrated over the summer as it contains salt minerals.

What you need:

1kg very ripe tomatoes, diced
1 ripe red pepper and 1 green pepper, deseeded and diced
1 medium cucumber, peeled and diced
1 small chopped red onion
2 cloves of garlic, peeled and crushed
150ml olive oil
Juice of 1 lemon
2tbsp cider vinegar (with mother)
Handful chopped basil
Salt and pepper, to taste

What you do:
Mix the diced tomatoes, peppers, red onion and cucumber with the crushed garlic and olive oil in the bowl of a food processor or blender.

Blend until smooth, then add the salt and vinegar to taste and stir well.

Add juice of a lemon, cider vinegar and chopped basil.

Top Tip

As this soup is served cold it’s great to have after a workout – serve with Pecan Bread.
