Prawn and mango salad

This colourful and naturally sweet salad contains many different flavours to tantalise your taste buds.

Good for…

Packed full of healthy fats and the cruciferous vegetable cabbage which, contain powerful antioxidants, lutein and carotenoids along with vitamins A and C.

What you need:

200g savoy cabbage
1 large carrot
1 avocado
250g king prawns (defrosted if frozen)
Slice of mango
White wine vinegar
Olive oil
Salt & pepper

What you do:
Finely chop the cabbage and carrot. Cut in half, pit and peel the avocado and then cube. Dice the mango, and add to the vegetables with the prawns.

Combine the olive oil and vinegar, place over the salad and serve.

Top Tip

Also good with diced chicken and balsamic vinegar. Add the dressing just before serving.
