A delicious and nutritious lunch that will keep you feeling full all afternoon.
Red cabbage is part of the brassica family it contains twice the amount of vitamin C as a green cabbage. It is well known for its health promoting properties. Apple is also a good source of antioxidants especially with the skin on.
What you need:
1 red onion, chopped
Half a small red cabbage
250g pre-cooked puy lentils
150g goats cheese
Salt & pepper
What you do:
Finely chop the onion, cabbage and apple, mix in a large salad bowl. Mix in the puy lentils and crumble the goats cheese, over the top. Dress with olive oil, balsamic and season to taste.
You can replace the lentils with meat, for example: roast lamb or chicken and the goats cheese with feta.
