Time to try noodles with a difference: courgette noodles, also known as ‘courgetti’, are a great complement to any dish. You can lightly steam them or have them raw, all you need is a spiralizer to make healthy noodles in a flash and, best of all, the kids will love them to.
Courgettes have a high water content and therefore can help to protect against dehydration and contain carotenes to help protect against the sun. Beansprouts contain the ‘spark of life’ they contain numerous vitamins and minerals – the energy contained within the seeds is ignited during the soaking and sprouting to provide you with an abundance of energy. Sesame seeds are a good source of calcium.
What you need:
1 large courgette
1 sliced yellow pepper
100g mange tout, steamed
100g of mixed bean sprouts (for example: aduki, lentil, chick pea, mung)
1 tbsp. sesame seeds
For the dressing
2 tbsps. tamari
120g almond butter
2 tbsps. melted coconut oil
Squeeze of lemon
Pinch of chilli flakes
What you do:
Spiralise the courgette to make noodles (or use a julienne knife or mandolin).
Place the noodles, pepper, mange tout, bean sprouts and sesame seeds in a bowl. Mix well.
Whizz together the dressing ingredients and pour over the vegetables. Mix well and serve.
Get the kids involved in cooking and try spiralising other vegetables like carrots. If you are taking this dish to work add the dressing just before serving.
