This is great to have with fruit and vegetables for breakfast – it’s a good substitute for cream or yogurt. Make this rather than reaching for a jar of peanut butter.
Cashew nuts contain monounsaturated fats good for a healthy heart and are a rich source of minerals.
What you need:
100g raw cashews, soaked for 1 hour and drained
100ml filtered water
1 tsp vanilla extract
What you do:
Drain the cashews place in a blender, add 60ml of water and blend, add more water as necessary to make a smooth cream, then add the vanilla extract and blend until mixed together.
You can soak the nuts overnight.
