Energy balls

Good enough to treat! These energy balls are great for a snack or as an after dinner treat, packed full of nutrients they’re simply delicious.

Packed full of healthy fats, with raw chocolate that’s rich in zinc, iron and magnesium for heart health the energy balls are also high in antioxidants with a natural sweetness from the dried fruit and minerals from the nuts and seeds.

Makes 24 balls

What you need:

150g mixed seeds (sunflower, pumpkin, linseed)
150g mixed nuts (cashews, almonds)
2 tbsps coconut oil
50g prunes, chopped
2 tbsps cacao power

What you do:

Place mixed seeds in a blender and grind them into flour. Place into a bowl. Then melt the coconut oil in a pan. Add the nuts to a blender add half the melted coconut oil and blend. Then transfer to the bowl and mixed together, before adding in the chopped prunes.

Using your hands to shape into teaspoon size little balls and then roll in cacao powder and place in petit four cases. Chill for about 1 hour then serve as a snack or after a meal.

Top tip:

Cut the prunes into small pieces using a pair of scissors
