Flaxseed and apple muffin

Would you like to take something different to work? Or are you stuck for ideas for the kids lunch boxes? Try these muffins instead of bread.

Good for…

Flaxseeds are a concentrated source of phytoestrogens, and are good for digestion. Apples are a good source of antioxidants, especially vitamin C. They provide a good source of soluble and insoluble fibre, so are also good for healthy digestion.

What you need:

150g ground flax seeds
1 tsp baking powder
½ tbsp cinnamon
2 tbsp raw honey
¼ tsp salt
1 apple, finely chopped
2 eggs
25 ml oil
50ml apple juice
½ tbs vanilla extract

What you do:

Preheat oven to 180 degrees.

Mix dry ingredients and apple in a large mixing bowl.

In a separate small bowl mix the wet ingredients, then add this mixture to the dry ingredients and mix well.

Allow the batter to stand for 5 minutes to thicken.

Spoon mixture into muffin cases.

Bake for 18 – 20 minutes.

Allow to cool and enjoy.

Top Tip

You could also add grated carrot for a variation.
