Can’t live without your daily bread? No one said you had to!
Pecans contain monounsaturated fat in the form of oleic acid. They are also an excellent source of B vitamins and vitamin E along with an array of minerals which, include manganese, zinc and magnesium. Bananas add natural sweetness to this bread along with potassium, a mineral that is essential for normal blood pressure and heart function. They also have an antacid effect and are known to protect the lining of the stomach.
What you need:
1 tsp baking powder
¼ tsp cinnamon
1 large ripe banana
2 tbsp olive oil
What you do:
Preheat oven to 180°C. Grind the nuts in a blender.
Place in a bowl with the other dry ingredients.
Place the eggs, banana and oil in a blender.
Blitz till smooth.
Pour the batter into the dry ingredients and mix well.
Spoon into a lined loaf pan.
Bake for 45 minutes.
Turn out and allow to cool.
