A great accompaniment to any main dish and perfect for using up whatever veg is hanging around in fridge.
Vegetables should be the main part of your meal. Consuming a high amount of different vegetables will provide you with an array of vitamins and minerals.
What you need:
1 red pepper
1 red onion
2 cloves garlic
2 tbsp olive oil
What you do:
Preheat the oven to 200°C/gas mark 6.
Chop all the vegetables, combine and place in a roasting tin.
Add olive oil, salt, pepper and the herbs.
Roast for 30 to 40 minutes, turning every 10 minutes until the vegetables are cooked.
